The 2 inch body is small enough that a bare aluminum rotor is genuinely awkward to turn with cold or dry hands. The grip slides over it and gives you purchase, so the mill turns with less force and does not want to twist out of your fingers. It shields the body from knocks in a bag at the same time.

BPA free food grade silicone. On in a second, off just as fast, and it washes with soap and water.

Clear keeps the mill's finish on show, Neon Green makes it findable. It is sized specifically to the 2 inch body, so if you run the bigger mill you want the 2.5 inch grip instead.
